Quick and Easy Cookie Skillet Recipe

Quick and Easy Cookie Skillet Recipe

There are some days when I just need dessert fast. Last weekend, after a long week, all I wanted was something warm, gooey, and comforting while I curled up on the couch for a movie night. Instead of fussing with a complicated recipe, I reached into the freezer for my PIKA cookie dough and whipped up the easiest (and most indulgent) treat: a cookie skillet.

It’s honestly become one of my favorite ways to bake with Pika. It feels a little extra, like something you’d order at a restaurant, but it couldn’t be easier. And the best part? You only need two things: our frozen cookie dough and your favorite ice cream.

Why You’ll Love It Too

What I love most about this recipe is how versatile it is. Sometimes I use our brown butter oat & dark chocolate dough when I want something rich, other times I go for Raspberry Dark Chocolate when I’m baking for friends and want something more fancy. No matter what flavor you use, the result is always melty, chewy, and absolutely irresistible.

It’s also the kind of dessert that feels impressive even though it takes barely any effort. Trust me, serve this at your next dinner party, and your guests will think you spent hours baking.

How I Make My PIKA Cookie Skillet

Ingredients:

You only need two things (yes, really!):

Step-by-Step Instructions:

  1. Pre-Heat Oven: I start by pre-heating the oven to 180°C
  2. Assemble: While the oven is heating, I slice up the cookie dough (If using cookie dough balls - our newest product, ignore this step) and lay them out on a skillet (you can use any oven-safe dish) until most of the surface is covered.
  3. Bake: Bake it at 180°C for 10 minutes. Don’t over bake it. You want that center to stay gooey and soft.
  4. Serve: Pull it out of the oven, drop a big scoop of ice cream on top, and dig in while it’s still warm.

That’s it! Dessert done in less time than it takes to pick a movie.

Recipe Tips

  • Don’t over-bake! The magic of this skillet is the soft, molten center. Pull it out when the edges look golden but the middle still jiggles a little.

  • Serve it hot. This recipe is all about contrast, warm cookie + cold ice cream.

  • Use a cast-iron skillet if you have one. It keeps the cookie warm and gooey for longer.

Substitutions & Variations

  • Different flavors: Try mixing two PIKA cookie dough flavors for a swirled cookie skillet (like half chocolate Chunk, half Peanut Butter).

  • Toppings: For a salty-sweet combo, sprinkle with some sea salt before baking.

FAQ

Q: Can I make this ahead of time?
A: It’s best enjoyed straight out of the oven. But you can prep the skillet with dough, cover it, and refrigerate until you’re ready to bake.

Q: My cookie skillet turned out too firm. What happened?
A: You probably over-baked it. Remember: gooey is good! Take it out when it looks a little underdone.

Q: Do I need to grease the pan?
A: No that's not necessary as its meant to be eaten straight from the pan.
